When it came time to plan dinner, I had nuthin' left. In a last ditch attempt to get the girls to clean up the destruction in the Addition, I promised them pancakes. This seemed to speed the process up substantially, and even Michaela Byrd paused from her gleefully frantic efforts to empty the dress-up box of all 457 plastic necklaces to help her big sister clean.
They aren't beautiful, but they sure taste good. No Bisquick required!
Here's my favorite EASY recipe (I double it):
Pancakes
from Better Homes & Gardens New Cook Book
Ingredients:
1 cup all-purpose flour
1 T sugar
2 t baking powder
1/4 t salt
1 beaten egg
1 cup milk
2 T cooking oil
In a medium bowl, stir together flour, sugar, baking powder, and salt. Make a well in the center of the dry mixture and set aside. In another medium mixing bowl, combine eggs, milk, and cooking oil. Add egg mixture all at once to the dry mixture and stir until moistened. Batter will be lumpy. Cook over medium heat about 2 minutes on each side or until pancakes are golden brown.
I served mine with fresh strawberries last night. Even Natalie agreed that it was worth the drudgery of picking up all of her toys. Maybe we should have pancakes every day.

ReplyDeleteI'm right there with you. . . breakfast for supper is a great fall-back meal. And to tell the truth, it's one of my favorites. I rarely eat "breakfast food" for breakfast, but at suppertime--yum!

ReplyDeleteWhen I'm in that predicament, sometimes (like last night) I just scramble up some eggs. Even though I don't like eggs and don't really eat them.
My other fall-back is taco meat. Brown up some ground beef with taco seasoning and you can have taco salad, nachos, burritos, quesadillas (we rarely have just tacos, though!).
Yummmmmm....those look so good! And why not use pancakes for motivation to clean.....sure works for me! ;D

Breakfast for dinner is usually my fallback idea. We all love it and it seems like a treat since it isn't often that we have a big breakfast in the mornings. Pancakes or belgian waffles with either bacon or sausage is the top vote-getter around here.

I don't think to do breakfast for supper, but as a kid, I loved it when my mom did that. It was a special treat when my dad was out of town. Your pancakes look really tasty!
