I don't normally share recipes more than once a week here on the blog, but today's recipe is one that was a staple in my childhood home on Christmas mornings. Growing up, I didn't care much for it, namely because having to sit down and eat it meant time spent waiting to run and see what Santa might have brought me! As an adult, I can appreciate the cheesy deliciousness.
My mom passed the recipe on to her girls, and I have perfected it by adding more cheese, which makes everything better if you ask just about anyone (except, of course for T).
So I hope you'll forgive my unspoken "I don't post recipes more than once a week rule." I thought I'd go ahead and share this one and give you a chance to make one last mad dash to the grocery store this holiday week.
Christmas Morning Casserole
Ingredients:
1 to 2 pounds mild sausage
2 eggs
1 1/4 c. milk
2 c. seasoned bread crumbs
1 to 2 cups cheddar cheese
1 can cream of mushroom soup
Directions:
*The Night Before-- Ground and cook sausage. Drain and put in bottom of baking pan. Sprinkle 2 cups seasoned bread crumbs over top. Mix eggs with 1 cup of milk and pour on top. Sprinkled cheddar cheese on top. Cover and refrigerate overnight.
*The Morning Of-- Mix 1/4 cup milk with mushroom soup and pour on top of casserole. Top with cheese. Bake, covered, at 350 degrees F for 45 minutes.
Unfortunately, I forgot to take a pic of the casserole just out of the oven, so you'll have to settle for this "leftovers" shot from the next day...just out of the microwave. It doesn't do justice to the perfection that is this casserole, but you get an idea.
If Mom makes this, I usually bring my friend L's recipe for apple dumplings, but I'm toying with the idea of monkeybread or cinnamon rolls....

ReplyDeleteSince it is just the two of us on Christmas, I don't think I'm going to make a breakfast this year. Last year I did a casserole similar to yours and it spoiled my appetite a bit for my mom's oysters. I think I might just let Mr. SP eat his usual Pop Tart and I'll have some cereal. I would hate to let an oyster go to waste later in the day!
Oh yum! I've been looking for new breakfast recipies. I usually stick to a spinach egg & bacon quiche or my cheesy hash brown casserole which is always a hit but I only make a few times a year b/c it's ridiculous how much butter & cheese goes into it :-)

ReplyDeleteWe always have cinnamon rolls on Christmas morning, my dad started this tradition and it just doesn't seem like Christmas without them!

ReplyDeleteSounds delicious! Never had it with dry bread crumbs. I usually use fresh bread. Going to try it over the holidays.

ReplyDeleteI usually do cinnamon rolls - I posted my cheat recipe. Then we have a heavy afternoon lupper, linner, or whatever you call that.
We always have cinnamon rolls on Christmas morning. But I was thinking today that I should make a breakfast casserole on Christmas Eve morning. I think I will. Thanks for sharing this.
