During the holiday baking season, I try to use this time as an opportunity to try new dessert recipes. Though the traditional holiday desserts are delicious, it is fun to mix it up and give your guests something new to try.
This year I tried a new recipe for a banana blueberry cheesecake. It is amazing!
First, bake your pie crust. I used a store bought one and fluted the edges.
Unfortunately when it baked it did not stay up. Any advice to keeping it stand up? No worries...it still tastes delicious nonetheless.
Layer the bottom of the pie crust with sliced bananas.
Mix together softened cream cheese (the 1/3 less fat is just as delicious but a little more guilt free--the nonfat kind does not taste as good though), Cool Whip, powdered sugar, and lemon juice.
Cover your bananas with the cream cheese mixture.
Top it all with a can of blueberry pie filling. Refrigerate until ready to serve. This can be made a few days in advance.
Shortly before serving or on the day of, top with whipped cream.

Banana Blueberry Cream Cheese Pie
1 pastry crust
2 bananas
8 oz cream cheese, softened
8 oz Cool Whip
1/2 cup powdered sugar
1 tsp. lemon juice
1 can blueberry pie filling
Bake crust according to directions. Line bottom of crust with sliced bananas. Combine cream cheese and Cool Whip. Add powdered sugar and lemon juice. Top with pie filling. Chill about an hour before serving. Top with whipped cream.

ReplyDeleteThis is gonna sound weird, but it works to hold a crust in place while baking it.
Fill the inside of the fluted crust with white dry beans (I keep about 6 cups of beans just for this purpose). And bake crust as usual. Pour out the beans when the crust has cooled. Easy!
