Today I'm giving you one of my go-to appetizer recipes for girls' nights, couples' get-togethers, game days, you name it. Spinach Artichoke Dip! Pretty much everyone except T likes it, and that's only because it features cheese in a starring role. T's slightly freakish aversion to all things cheese (save for pizza and Cheez-its, oddly enough) is what keeps me from making this more often. But I had the opportunity last weekend, and I took it!
Ingredients:
1 (14 oz.) can artichoke hearts, chopped and drained
1/2 (10 oz) package of frozen chopped spinach, thawed (I used the whole package)
1/2 cup sour cream
1/4 cup mayo
1/4 cup cream cheese
1/4 cup grated romano (I just used packages of Italian cheese, and I used a lot more cheese)
1 teaspoon minced garlic
Instructions:
Preheat oven to 375 degrees F. In a small baking dish, mix ingredients. Cover and bake until heated through and bubbly. (About 25 to 30 minutes). I add a bit of lemon juice before serving with pita chips, bagel chips, or crusty bread.

ReplyDeleteThis looks delicious! I make a similar spinach-artichoke dip, but I make it in the crock pot. It's always a hit...like yours.
ReplyDeleteMmmm. . . this looks scrumptious! Maybe T doesn't like cheese because God used an extra portion of cheese-love when he made me. Honestly, I think I could be a vegetarian as long as I could have cheese in place of meat. There's scarcely a cheese or cheese product I don't like--it's ridiculous. :)

I've tried to make this dip at home before because we love it at restaurants, but the artichokes always end up completely overpowering the dish wit a wonky flavor. Maybe I just didn't throw in enough cheese. :)

YUM!! I have a spinach artichoke recipe that's pretty similar to this one, I think. It's so good!! And people are always so impressed that it's homemade. I've only had it with chips so far, not crusty bread. That would be even better.

ReplyDeleteI could literally eat the whole dish! This is one of my favorite dishes and I love the addition of sour cream to make it so creamy. I have never tried the Romano cheese before. We will have to try this. Such a great company treat.
I made pretty much this exact recipe for a superbowl party- YUM! I also found that whipped cream cheese is much easier to get to mix with the other ingredients. :-)
