Easy Weeknight Dinner: Cowboy Soup

Whether you've been out roping cattle all day or herding small humans like I do, coming up with a decent meal at the end of the day can be tough...especially when the cattle kids and husband are getting hungry and cranky and whiney and really annoying and you just want them all to go to bed so you can watch The Bachelor.

My Aunt Linda gave me a recipe for Cowboy Soup several years ago. I'm not sure why it's called "Cowboy Soup," but since she lives in Texas and Texans know everything there is to know about cowboys (right?!), I decided to go with it.

I love the simplicity of this recipe! I haven't found an easier "throw-it-together" meal in awhile.

Ingredients:

(Wow, so I bet you can't tell I bought the ingredients at Wal-Mart, can you?!)
  • 1 can red beans
  • 1 can pinto beans
  • 1 can ranch style beans
  • 1 can corn
  • 1 can hominy
  • 1 can stewed tomatoes
  • 1 can rotel tomatoes
  • 1 pkg. taco seasoning
  • 1 pkg. Ranch dressing mix
  • 1 pound ground beef

(Note: Sometimes I have a hard time finding ranch style beans. I also couldn't find rotel or stewed tomatoes. That WM stinks. I improvise with this soup and use whatever I think might taste good.)

Instructions:
Brown the ground beef. Drain and add all the ingredients to a large soup pot. Bring to a boil and then reduce to simmer until cooked through. (15 to 20 minutes)

I like to sprinkle some cheddar cheese on my soup after dishing it out. Served with a side of warm cornbread, this is a great cold weather meal!

  5. I love soup when it is cold...my hubby and boys are not big fans though! My sister makes something kind of like this that she calls Taco Soup and then she crumbles corn chips on top!

  10. Looks great! I make a VERY similar soup, we call it taco soup.

    Cornbread is the perfect side for it, and I like cheese AND sour cream on the top. Mmmmm now I'm hungry!

  11. It looks good and easy...except for the jiffy cornbread. As a Texan I resent sweet cornbread. Ha! My husband and I have a running, friendly argument over cornbread. :)

  12. It is cold and rainy out here in the NW and this sounds like the perfect soup for today. I just posted a recipe for corn bread that I got from a girlfriend and this will be perfect! Thanks for sharing.

  13. They didn't have rotel? Not even their own brand of diced tomatoes w/ green chilis? That's weird.
    I've had this soup before (yum!), but I think they just called it taco soup. Cowboy Soup sounds like more fun!

  17. Oh, thanks so much for visiting my site ... because, now I've found you! I love following young moms .. like my daughter ... so I can learn everything good grandmas should know! I make something similar to your soup ... we just call it Cowboy Beans. My recipe came from my brother who has always been a bit of a cowboy! I love to fix it over a wood fire, when we cook over a camp fire (in teh back yard ... no real camping for me!) Great post ... super blog ... thanks for sharing.

  19. i love this recipe, although like others i know it by plain ol' name of taco soup. my kids request it almost weekly in the winter and eat it with shredded cheddar, sour cream and crunched up tortilla chips on top. mmmm, i may have to make this tomorrow night!

  21. We are big soup eaters and I know that this recipe would be enjoyed by both of us. I've never tried Hominy but I do remember my dad eating it.
