Flatbread Pizza Recipe with Marzetti Greek Yogurt

During the holidays, I tend to get so busy and into projects and errands that by the time I have a chance to make something to eat for myself, I end up with whatever boring choices are on hand. I had the opportunity to try out Marzetti's Otria Greek Yogurt Veggie Dip recently, and I made up my own little recipe for a simple and quick Flatbread Pizza.























Here's what you need to make your own:


-Marzetti Otria Greek Yogurt Veggie Dip
-Homemade or Store-bought Flatbread (I used a whole grain one from the store)
-Mozzarella Cheese
*The Following ingredients are optional and to taste:
-Frozen Spinach (thawed and drained)
-Mushrooms
-Sliced, Pitted Kalamata Olives
-Chopped Artichokes
-Crushed Red Pepper
-Parmesan Cheese

Other Topping Ideas:
-Tomatoes
-Eggplant
-Sauteed Onions
-Prosciutto
-Arugula
-Peppers
-Asparagus

Instructions:

1. Preheat your oven to 400 degrees F and spread Marzetti Greek Yogurt Veggie Dip on top of flatbread.
2. Sprinkle mozzarella cheese on top of the Greek Yogurt Veggie Dip.
3. Add thawed spinach and spread.
4. Add toppings (chopped artichokes, olives) and bake at 400 degrees F for 9 minutes.
5. Sprinkle with Parmesan cheese and crushed red pepper.























The key is to have a little fun with it. I wasn't precise with my measurements or placement of toppings. I just sort of added dollops of ingredients to the flatbread before plopping it into the oven. The serving was enormous...definitely enough for two. My girls wouldn't touch it with a ten foot pole ("weird toppings"), so it just meant more leftovers for me. And I was fine with that.

A little bit of the Greek Yogurt Veggie Dip goes a long way! I had plenty of dip left after the pizza to make another meal and several snacks worth of dip for my carrot sticks or crackers. It has a nice, smooth consistency and a little bit of a tang to the taste. While I couldn't really see the artichokes in the actual dip, I could see and taste the spinach.

When do you eat lunch? I'm embarrassed to admit that by the time we get home from 12:15 kindergarten pick-up and I've fed the kids, checked my email, peeked at Pinterest, and found something to occupy the girls...it's sometimes 2 pm before I remember that it's time to eat lunch. I don't mind eating late so much because I can have a bit of quiet time to myself. If Michaela Byrd is napping, I let Natalie watch a cartoon or I have her play in the other room. Then I can sit and enjoy my lunch without little people asking me questions, picking at my plate. I grab a Coke or a big glass of ice water, make a lunch, and catch up with my good old friend, DVR. It's a nice little slice of quiet in my afternoon.

I'm happy to have some tasty new snack and meal options! For less than four dollars, the Marzetti Otria Greek Yogurt Veggie Dip is a handy little container to have around. They sell them at my local grocery store, and I've also seen them at our Target.
