Ingredients for Cake:
-1 small package of Reese's Mini Peanut Butter Cups
-2 large eggs
-2 cups granulated sugar
-2 cups all purpose flour
-1/2 tsp. salt
-1 tsp. baking soda
-1/2 cup buttermilk
-1 tsp. vanilla extract
-1/2 cup cocoa powder
-1 cup unsalted butter
-1 cup hot water
Instructions:
Preheat your oven to 350 degrees F. Grease your pan (I used a 9 x 13 baking pan) with cooking spray.
1. Whisk flour, sugar, and baking soda in a large mixing bowl. Set aside.
2. In a separate, smaller bowl, whisk the eggs, buttermilk, and vanilla extract.
3. Add butter to a small saucepan and melt on medium heat. Add cocoa powder and hot water; mix well. Turn the heat to medium-high and bring the mixture to a boil.
4. Pour the melted butter mixture over the dry ingredients and mix until smooth.
5. Pour the egg mixture in with the chocolate mix.
6. Stir until thoroughly combined. Pour about 1/3 of the batter into the bottom of the greased pan.
7. Sprinkle chopped mini Reese's cups to the top of the batter in the pan.
8. Top with the remaining batter and bake for 20 minutes, or until a toothpick inserted in the center of the cake comes out clean.
Ingredients for Icing:
-1/2 cup milk (I used whole because that's what my girls drink)
-3 cups sifted confectioners sugar
-(just over) 1/2 cup creamy peanut butter
-1 tsp. vanilla extract
Instructions for Icing:
1. Add the confectioner's sugar, peanut butter, and vanilla to the bowl of a stand mixer.
2. Beat with the blade attachment until smooth.
3. As soon as the cake is out of the oven, pour your icing over it.
4. Smooth icing over any areas that need it and pull out your secret weapon:
I know, right?
Just sprinkles those babies all over the top of your cake, and you're good to go. A delicious combo of chocolate and peanut butter!

ReplyDeleteIt has one layer of chocolate pb goodness after another!! I just made chocolate cupcakes with peanut butter cookie dough frosting for my husband's birthday. I WILL be freezing the leftover dough for mixing into ice cream. Yum.
