I can tell that Spring is near when I start getting a hankering for anything blueberry.
We have a playdate planned this morning while Natalie is at preschool, and I always like to serve a little treat when we have friends come over. With the unprecedented Spring-like weather we enjoyed yesterday, I thought something blueberry-esque would be nice.
Unfortunately, I had a very busy schedule last night of watching the Oscars and folding 687 pairs of little girls' white socks.
So I broke out the Ducan Hines Blueberry Streusel Muffin mix.
It don't get much easier than this, y'all! Yes, I did have to break a can opener out to open the can of real (!) blueberries, but it was all downhill after that.
Mix it up, dole it out, bake for 15 minutes or so, and Voila!
A tasty treat that any toddler (or her mom!) will devour.
{Do you have a favorite last-minute treat that you serve?}
*Please come back on Wednesday for the very first Show Me the Progress party!
The party will go live on Tuesday night at 10 pm (ET), and there's a great Giveaway contest for participants. Remember, your progress can be anything from ideas you have for your Dilemmas to completed "After" photos. I'd also love to hear about other ways you've made progress in your life: work or fitness goals, reading lists, schedules or routines with your kids, you name it!
*I'm editing this to link to Kimba at A Soft Place to Land. I could have just bought donut holes, so taking the time to make boxed muffins, albeit delicious ones, is DIY in my humble opinion.

Love this idea - ESPECIALLY since I'm taking my "after" photos tonight, having just completed 90 days of the P90X fitness program! :-)
ReplyDeleteYummy! Blueberry anything is my favorite. I'm trying to think of a last minute treat. It'd have to be cupcakes or cake mix cookies.
ReplyDeleteYum! I usually love to make chocolate muffins with a Duncan Hines Devil's Food Cake mix and a can of pumpkin but can't find a can of pumpkin to save my life right now...
ReplyDeleteThat looks delish! When I don't have time to make blueberry muffins from scratch, I'll take the mix, spoon out the fake "blueberries" and throw in some fresh ones. Doing a little Sandra Lee! : )
ReplyDeleteLooks delicious :) Love blueberry!
ReplyDeleteThose look delicious, Amanda--it's nice to know that they actually taste good, too! I often wonder if boxed mixes are good. What a good idea to share that kind of information with your readers!
ReplyDeleteI'm in California. We watched the Oscars last night, and it was hilarious to think that the red carpet is not far from where we're staying. We didn't have the energy to make our way to Hollywood to join the gawkers, but the thought that we could have done that was enough to make us giggle. And it was great that the awards show ended about 9:00 PM here!
As you can tell, I do have computer access here. I'm going to try to get online tomorrow night and link my post up to your Progress party. We'll see if I can get it done!
Well now I am hungry!! Looking forward to your progress party!

Blueberries are a no fail in our home. We just had lemon blueberry muffins this morning!
ReplyDeleteAmanda, what a perfect little snack for a play date! I will definately link up to your party on Tuesday night or Wednesday morning...it sounds like fun, and I've always got something I'm makin' progress on.
ReplyDeleteAmanda, Amanda, Amanda-- thank you SO MUCH for not giving us a "from scratch" recipe!!! I am beyond thrilled you gave me something out of the box. That's the only way we make muffins in our house :)
ReplyDeleteI have made ZERO progress on our bedroom. Sigh. My aunt was supposed to come down to help us (she used to be an interior designer) but she got a new job, and can't take time off yet. I'm beyond bummed. I am sick of my white walls!

Confessions From A Working Mom
I LOVE these muffins. I just bought two more boxes yesterday. Blueberry muffins are by far my favorite and these are so easy and SO Delicious.
ReplyDeleteDang!! I missed muffins? I will totally bring treats on Wednesday ;) We should do a tandem blog that day about our play date. That would rock.
ReplyDelete(and if you weren't talking about me in this post, well just ignore this comment! lol)
I'm a sucker for anything blueberry. It's good to know that the mix you used is a winner.
ReplyDeleteI just made Duncan Hines Spice Cake. Took a little longer than 15 minutes and I also had to sprinkle confectioner's sugar on top! Still easy as "pie" - where did that saying come from??
ReplyDeleteThanks for being real! I love that about you and your blog!
I hope this means that you are seeing some signs of spring and that the cabin fever has broken!!!
ReplyDeleteOh I do love blueberries, but typically my "summer cravings" start with fresh cherries. ;) Although at this point, any fresh frfuit sounds like perfection.
ReplyDeleteyummers.....sounds so good. and perfect for a play date.

LOL This is the type of baking I can get behind :D
ReplyDeleteHi Amanda!
ReplyDeleteYummy muffins! I love blueberries - reminds me of growing up in Michigan!
I am so sorry I will not be able to link up to your party on Wednesday - I will still be out of town. It sounds so fun though!!!
XOXO

Yum-o those look good! I love easy/semi-homemade recipes. My SIL introduced me to 2 ingredient pumpkin muffins. You just mix carrot or spice cake mix with canned pumpkin (I forget how much, but I can look it up!) They come out really flavorful and moist and it's soooo easy!
ReplyDeleteI must confess that I always use a mix on my blueberry muffins....busy moms do what they have to right?? Brownie mixes are also my friend...
ReplyDeleteoh this sounds really tasty right now! I love making cookies last minute even if it's from good ol' Tollhouse :) shh don't tell anyone! hehe
ReplyDeleteOne of our favorite "fast" goodies is graham cracker sandwich cookies. Just spread frosting on a graham cracker and top with another cracker.
ReplyDeleteSo yummy dunked in milk!
